Potato Sandwich

I am reposting this potato sandwich recipe.  Recently I have simplified this recipe and eliminated cheese, tomato and ginger.  I felt this sandwich tastes better without these ingredients.   

Enjoy these potato sandwiches for breakfast or lunch.

Ingredients:

Potatoes - 2 medium potatoes

Onions - 1 onion

Green chillies (optional) - 1 or 2 

Turmeric  - 1/4 tsp

Salt to taste

Oil - 3 tbsp

Mustard seeds - 1 1/2 tsp


Method:

Boil potatoes and mash them. You can use a potato ricer to mash the potatoes.  



In a wok or any pot heat oil and add mustard seeds.  As soon as the seeds begin to pop take the pot off the stove. After the seeds stop popping put the pot back on the stove and add onions.  Stir fry the onions for a few minutes until it softens a bit.  Add turmeric powder.

Mix and add mashed potatoes.  Add 1/2 tsp salt and mix thoroughly.  Turn off stove and mix the ingredients well. Now the potato stuffing is ready for use.


Butter slices of bread on one side only.  



Preheat the sandwich maker.  Put one slice of bread on the sandwich maker with the buttered side on the bottom.  Put 2 to 3 tbsp of the potato filling on the bread and spread it evenly.  Put another slice of the bread on top of the Potato filling with the buttered side facing up. Close the sandwich maker and let the bread toast for 4 minutes.  Open the sandwich maker and remove the sandwiches and serve.
