Instant Pot Veg Pulav

I grew up eating veg pulao and really loved the aroma and flavour of it.  I have tried to recreate the recipe many times and now I have finally hit upon the right recipe. I am glad to share it here now on my recipe blog. Here is the recipe...

Ingredients:

Cooking oil - 2 tbsp
Ghee - 2 tbsp
Onion - 1 big or 2 medium to small
Carrot 1/2 cup chopped
Potato or beet - 1 chopped
Peas (I used frozen peas) - 1/4 cup chopped
Green chillies 2 chopped or 1 1/4 tsp kashmiri chilli powder
Garam masala - 2 tsp
Ginger Garlic paste - 1 tbsp
Turmeric powder - 1 tsp
Rice - 1 cup
Salt - 2 tsp or to taste

Coriander leaves - 2 tbsp chopped
Water - 1 1/2 cup

Method:


 

Wash and soak rice. Chop all the required veggies. prepare ginger-garlic paste. In a small container have the garam masala powder, turmeric and salt ready.







Turn on Instant Pot and add oil and ghee. Add onion, chillies & Ginger-garlic paste. Stir and add garam masala, salt and Turmeric. Stir and add carrots, potato or beet and peas. Stir for about a minute or two.


Drain the water from rice and add rice. Add 1 1/2 cups water and stir well. Close lid. Cancel the saute mode and choose Rice.

After the cooking is done and pressure is released add chopped coriander leaves and gently stir the rice and serve.
