Easy Udon Noodle Soup

 A few weeks ago I had bought couple of packs of Vegetable broth and I saw a recipe for a soup posted on the package. The recipe seemed very simple with few general ingredients which should be most likely available in anyone's pantry.  As I was reading the recipe it seemed very mouthwatering and made me hungry.  So I was willing to try it and now has become a staple.  With very few basic ingredients you can whip up a meal within 30 minutes.

Now about the ingredients, feel free to substitute if you don't have any of the ingredients. For instance you may substitute the noodles with whatever variety you have in your pantry.  If you don't have sesame oil use whatever oil you may have available.



All the ingredietnts you need for this recipe are as follows:

Udon noodles - 250g or 200g packet
Sesame oil - 4 tsp
Canola or coconut oil - 2 tsp
Mushrooms - 10 whole mushrooms (around 100g)
Ginger - grated 1 tbsp
Vegetable broth - 900 ml  (1carton of the broth)
Soya sauce - 2 tsp
baby spinach, mesclun or any variety of greens - 1 cup packed

Method:

Cook the noodles as per package directions.  Place the noodles divided equally in 2 bowls if you are making this for 2 people. I used two 3 cup bowls (meaning I used a bowl that can hold 3 cups of liquid). Add 2 tsp of sesame oil in each bowl and toss the noodles.




Heat 2 tsp of oil in a pot.  Add mushrooms and ginger and toss gently for a couple of minutes or under.  Add broth and soya sauce. Bring to boil and simmer for 5 minutes.




Divide the greens equally and add to the noodles already in the bowls.  Pour the cooked broth with the mushrooms into the bowls dividing equally between the 2 bowls.  As you pour the broth into the bowls the greens will begin to wilt.  Voila! your soup is ready to be enjoyed.



You may sprinkle a few chilli flakes if you want a bit of a kick.  Enjoy this quick and hearty soup.
