Curried Cauliflower Soup - the easy way...

 Curried cauliflower soup....the very title makes my mouth water just thinking of all the ingredients that go into it....yumm....I share with you one of the simplest soups. Here goes the ingredients list and the recipe....

Ingredients:-

Onions small (not too small) - 3

Cauliflower - 1 medium sized

Garlic - 5 or 7 cloves

 Baby bokchoy 3(take the leaves apart and wash them)

Curry powder - 5 tsp

Salt 2 to 2.5 tsp

Cheese grated - 1 cup

Coconut oil - 5 to 7 tbsp

Method:-

  1. Chop onion and cauliflower. You don't have to chop them too fine as you will be pureeing the soup any way. 
  2. In a big pot heat the oil.  To this add chopped onions.  Stir fry for about 3 o r 4 minutes. Add bok choy.  Mix well and add cauliflower. Add enough water to cover all the veggies. After it comes to boil add salt and curry powder.  
  3. After the veggies turn soft, puree the contents of the pot.  You may use the hand blender or any blender to puree.
  4. After pureeing the soup to your preferred texture pour the soup back into the pot and add grated cheese.  Heat the soup until the cheese melts. Turn off stove and press garlic cloves through the garlic press (or simply mash the garlic cloves in a mortar pestle and then add to the soup. 
  5. Now the soup is ready to serve.

Note:-

You may use roux instead of cheese to make this soup creamy.  If you add roux just add an extra teaspoon of salt to the soup.

You may use broccoli or any other green vegetable instead of bokchoy.

If you buy the cauliflower with the leaves intact, you may use leaves of the cauliflower instead of Bokchoi or other greens.

If you like roasting the cauliflower you may do so before adding to the soup.
