I got the inspiration to make this soup from the page yummly.com Instead of adding cream I used rice to make this creamy soup. I used white basmati rice. You may also use parboiled basmati rice. Hope you enjoy making this soup as much as I did...Happy cooking and happy eating...
Ingredients:-
Frozen peas - 3 cups
Frozen mixed veggies (peas,beans,corn,carrots) - 3 cups
Onions - 1 medium or large or 2 small
Ghee or butter - 1 tbsp
Coconut oil - 1 tbsp
Thyme - 1 tsp
Parseley - 2 tsp
Garlic - 5 cloves
Green chilli peppers - 6 (if you like you can reduce the amount of chillies. I prefer little bit of the heat)
Curry powder - 4 tsp
Rice - 3/4 cup
Salt - 2 to 3 tsp (depending on taste)
Water - 6 to 8 cups
Method:-
Heat a dutch oven or any big pot and add Ghee or butter and oil. Add chopped onions. Stir and cook for about 4 minutes until soft. Add thyme and parsley and stir. Cook for about 10 seconds.
Add water and salt. Once the water starts boiling add 3/4 cup of rice. Cook until the rice becomes soft. You may close the lid while the rice is boiling. This should take about 15 minutes. Keep checking after 10 minutes of boiling.
Add Frozen peas and frozen vegetables. Add chopped chillies & curry powder. Bring to a boil. Add more water (already boiling in a kettle) if needed. Boil for about 3 minutes. Puree the soup in batches.
Pour the pureed soup back into the pot. Add garlic using a garlic press or just add minced garlic. warm the soup. Turn off stove. Now the soup is ready to serve.
